Iconic Carnegie Deli Returns for One-Week Marketing Stunt

“Iconic Jewish delicatessen Carnegie Deli will return for a one-week-long pop-up. From December 1 through 8 — just in time for Hanukkah — 201 Lafayette St. in Nolita will be open from 11:30 a.m. to 8 p.m., with everything on the menu under $1. Carnegie Deli closed to much agita in 2016 after 79 years in Midtown, and the restaurant’s famed overstuffed pastrami and corned beef sandwiches are now being used to promote season two of Amazon show Marvelous Mrs. Maisel, a period piece about a Jewish female comedian in 1950s New York City.”

Designing a Chain Restaurant for 40 Million Travelers

“The estimated 40,000,000 people that pass through Washington D.C’s Union Station annually were a major consideration throughout the 6-month development of one of its newest bars and restaurants. Legal Sea Bar (part of the 37-Restaurant Legal Sea Foods chain) opened this past July on the West side of the station’s mezzanine level, was designed with high traffic in mind.

And so the casual bar/restaurant combo is “primarily designed for people trying to catch a train.” Small details take travelers’ needs into account: there are designated areas to put suitcases aside where visitors are still able to keep an eye on them, sufficient space between tables to store luggage, and ample hooks underneath the bar for easier purse and backpack storage.”

A French Celebrity Chef Finds a Spot in a Lexus-Owned Space

“The aromas you might pick up in this building, owned by Lexus, the car company, may not be that new-car smell but rather curry, roasting meat, smoked vegetables, caramel and freshly ground coffee. Food is the main purpose of this installation, which features a ground-floor cafe, a full-service restaurant and bar upstairs, and not a car in sight. It’s the third such venture for the brand, after others in Tokyo and Dubai. Union Square Hospitality Group is behind the cafe and restaurant, but the food is being devised by Gregory Marchand, a French celebrity chef who owns the Frenchie restaurants in Paris and London. He will be on hand from time to time for the next four to six months; after that, another chef-in-residence will be imported. “We want chefs who are new to New York and up-and-coming,” said Kirk Edmondson, the manager. The long-term executive chef is Nickolas Martinez, who worked with Joël Robuchon and at Foragers City Table. Kaz Fujimura is responsible for pastries, and Andrea Morris is in charge of drinks and wine. A circular bar and lounge is on one side of the second floor. The dining room, done mostly in black and white with a spacious open kitchen, seats 50. Mr. Marchand’s menu includes some of his signature dishes like baby leeks with Parmesan sabayon and smoked egg yolk, halibut grenobloise, and a toffee and banana dessert called banoffee.”

Ford teaming up with Walmart and Postmates on robot deliveries

“Ford is joining forces with Walmart and Postmates to create a grocery delivery service using self-driving vehicles in Miami, the companies announced Wednesday.

Ford has been using Miami as a test bed for its self-driving vehicles since earlier this year. And more recently, the auto giant joined with Postmates to see how people ordering takeout food would interact with an autonomous delivery van.

Now Ford is moving to the next stage: grocery delivery. The company says it will experiment with different vehicle types, as well as modifications to those vehicles needed to keep perishable food items fresh. It will also experiment with a variety of scenarios, such as multiple deliveries on one trip and the user experience of retrieving delivery items from a fully driverless vehicle.”

Chipotle Is Tired of Being Behind on Digital Strategy

“Chipotle’s new CEO Brain Niccol pulled no punches when he sat down for his first earnings call in April and candidly described Chipotle as an invisible brand. “This brand needs to be leading culture, not reacting to it,” Niccol said at the time.

In day-to-day operations, that’s led to a significant shift in the way that the company thinks about growth. Niccol said that he encourages more of a “test-and-see approach” on new initiatives under his watch, and in practice, the team has been freed up to move much more quickly on making decisions and testing new innovations. Niccol himself practices what he preaches — three months after he officially started as CEO, Niccol announced that Chipotle would be relocating its headquarters from Denver to southern California and closing down the New York City office.”

Shake Shack Sees Same-Store Sales Dip

Shake Shack, once the darling of better-burger brands, continues to show signs of struggle in the sector as it reported a same-store sales decline this week.

Comps decreased 0.7% for the quarter ended Sept. 26, while total revenue rose 26.5% and sales increased 27.2%.
Shake Shack stock prices tumbled more than 11% on the news early Friday.
During the quarter, Shake Shack opened seven company-operated stores and two licensed units.

The brand expects to launch its largest number of new stores in history in 2019, with plans to open 36 to 40 units, executives said during a call with analysts Thursday.
The company drew concern from investors following its announcement in August that it was suffering from a logjam in unit expansion, stalling growth until the later part of 2018.

Wine Glass Shape Affects Tasting Experience

“I take a sip of wine, and it floods across my mouth–a perfectly balanced cabernet that tastes of yeast, fruit, and stone. Then I take a sip from another glass. This wine strikes the tip of my tongue like a dart. It’s pure booze, and, seconds later, I’m left with a dank, bitter aftertaste. This wine has clearly gone bad; I should really pour the bottle out.
In fact, both glasses contain the same 2014 BV cabernet. And both are what most of us would describe as a “red wine glass.” But the first glass was designed to mellow out the big fruit and alcohol of cabernets. The second glass was built to concentrate the fruit and subdue the acidity of a different kind of wine: pinot noir. I just learned the dangers of drinking a great wine out of a glass designed for another varietal.”
