In this case, the play on words symbolizes the technique that the new modern bread bakery uses to prepare their products. With the use of small batch mixing and slow fermentation, which requires 1 to 3 days to bake, Bien Cuit has introduced New York to a custom French traditional way to artisanship and awakened an appreciation for something special.

What We Learned… Inspired by other cultures in techniques, design and flavor profile, Bien Cuit carefully created a business out of a well loved concept, the french bakery.
