Their Success… Taking a house-made concept from market to brick-and-mortar. What started out as the first of many BBQs for friends and family, turned into an overnight plan for success– a New York City-inspired street food favorite with an Asian twist. Stephen Porto, the co-owner of the hot dog shop, opened the location since he was tired of renting kitchens and wanted something more permanent. The store is experiencing much success since opening two months ago. When asked if they plan to stop having mobile trucks at various markets and events, Steve said “No, that’s why we are here today but we hope to open more [brick-and-mortar]”.

What We Learned… Create and Expand Brand Awareness: Mobile food enterprises give entrepreneurs a start-up ground plan to building brand awareness and acquiring a steady cash flow for possible expansion to a retail space.

Take Aways… What is the relationship between the retail shop and the mobile truck? How will they work together to grow the business? Are current production practices meeting the demand? Which is more cost effective for your enterprise– renting kitchen space or having a permanent retail location?
